Cobbler + Sunshine = Smiles

One good thing about digital cameras....when it's raining outside you have saved memories of sunnier days already on the computer for you to look at - to remember that life has indeed held brighter times for you. :) Saying that...there are advantages to rainy days too. Warm quilts to be snuggled under, funny movies to watch....baking to be enjoyed and gobbled up with a fresh pot of coffee. I LOVE the smell of coffee on a chilly day...and on a sunny one - I just love coffee. I wanted to post these pictures from last week. Our trip to Florida was planned the night after doing all of these things with the kids...baking and playing outside...loads and loads of laundry. Zac called me around 7 pm when I was getting everyone snug in their beds to tell me he would take me to see my grandma the following day - If I wanted. :) So, I began to pack like crazy and clean...and somehow in a whirlwind we were on our way to Florida the next morning..the gas tank filled and MacDonald's parfaits in hand (I know I know... I didn't have time to bake anything a little more filling and better for you - it was still nice though. )

Anyways...back to that sun filled day and the baking. :) The kids were restless so I peeked in the freezer to see what we could make and I remember a blueberry cobbler that I use to bake that was healthy yet delicious. Thankfully I had just enough blueberries. We set out the ingredients...Trin garbed in her birthday apron from Kate... Brady gearing up with as many measuring cups as he could grab...


I love using raw sugar or honey for baking. You don't have to use as much and it's so much better for you then refined sugar...plus, it looks pretty.


It's amazing how the *treat* of baking for a child is not just the product that comes out of the oven...but also the joy of throwing things into a bowl...watching puffy clouds of flour rise up out of a bowl...spilling milk (adults see it as *pouring*) into the gooey mixture...eating frozen blueberries that SHOULD be IN the cobbler...and lastly...licking those never- ending, always good tasting spoons that are dripping with the remaining batter that mama COULD have scraped better but knew there wasn't any fun in that. :)

We left the cobbler to go outside and enjoy the sunlight. Nothing like playing hard and then coming into a warm home full of homeyness and the mouth watering scent of a baking cobbler...or bread...or cookies...or chicken pot pie....or coffee (again)....BASICALLY ANYTHING THAT I CAN EAT.





The sun was shining long enough for me to put out the first wash of the year (not the first time I've washed but rather the first time I've hung them out. :)







Brady was digging for treasure. I can't believe how much better he is at using a shovel then he was a last summer...his becoming much more coordinated and I think it has to do with the time Zac has spent with him in the yard. Sometimes Brady doesn't seem like he's watching but then later he ups and surprises me by saying something or doing something that I wasn't even aware he knew how or knew what it was even!

And then...the cobbler. We love to eat it warm with a little milk on top for a snack or breakfast. It's also nice with vanilla ice cream as a dessert. This recipe is very wholesome which is why I don't mind talking myself into having it for breakfast. :) I found the reciped in Jordan Rubin's book The Great Physicians RX for Health and Wellness. Here it is if you ever want to try it :

Blueberry Cobbler

1 Cup of spelt or wheat flour, 1/2 cup of brown sugar(I use raw

1 Cup of plain yogurt, 2 tsp of baking powder

1/2 cup of honey, 2.5 cups of blueberries



Melt 1/2 stick of butter (I only use 1/4) in a 9X9 dish. Mix all ingredients EXCEPT blueberries together and pour on top of melted butter. Pour berries on top of batter. Bake for 35 -40 minutes at 375 degrees. I also like to add a little cinnamon and vanilla to the batter...I add cinnamon to EVERYTHING. It's very good for you and gives such a nice flavor. I've also tried this recipe with peaches and it worked really well.

Alyssa's Cobbler

Serving Size : 6

Amount Measure Ingredient -- Preparation Method

1 cup whole wheat flour -- or spelt
1/2 cup sugar -- raw
1 cup plain nonfat yogurt
2 teaspoons baking powder
1/2 cup honey
2 1/2 cups blueberries
1/4 stick butter

Melt 1/4 stick of butter in a 9X9 dish

Mix all ingredients EXCEPT blueberries together and pour on top of melted butter.

Pour berries on top of batter.

Bake for 35 -40 minutes at 375 degrees.

Per Serving (excluding unknown items): 308 Calories; 5g Fat (12.4% calories from fat); 5g Protein; 66g Carbohydrate; 4g Dietary Fiber; 11mg Cholesterol; 236mg Sodium. Exchanges: 1 Grain(Starch); 1/2 Fruit; 0 Non-Fat Milk; 1 Fat; 2 1/2 Other Carbohydrates.
